Raspberry Yog and Granola Parfait

Ingredients

  • 350g fresh or frozen raspberries
  • Juice from 1/2 lemon
  • 1 tub of Nush raspberry almond protein yog
  • 130g jumbo oats
  • 45g chopped walnuts
  • 40g chopped cashew nuts
  • 1/2 teaspoon ground sweet cinnamon
  • 30ml melted coconut oil
  • 35ml maple syrup
  • Pinch of salt

Method

Preheat oven to 180c

In a bowl combine the oats, chopped walnuts, chopped cashews, cinnamon, melted coconut oil, maple syrup and salt. Scatter the mix over one large or two smaller trays and place in the oven for 15 minutes, giving the trays a shake halfway through

Meanwhile add the raspberries and lemon juice to a pan on medium heat and simmer for 15 minutes

Add the Nush yog to bowls and top with the stewed raspberries and finish with a generous serving of the freshly baked granola on top.
